Ms. Kim is the head cook at the Bonnyville and District Daycare, where she prepares hundreds of meals and snacks every week for staff and children aged 0-6. This Tuna Biscuits recipe is one of the kids' favourites. They can be eaten warm or cold, pack well in lunch boxes, and are easily customizable to suit your family's taste.
The easiest way to eat canned tuna! Pair with a few cheese cubes and sliced fruit for a complete meal.
2 large eggs
1/4 cup mayonaise
2 Tabelspoons melted margarine or butter
1/2 Tablespoon lemon juice
22 Ritz crackers, crushed
1 6.5 oz can tuna in water, drained
salt & pepper to taste
Preheat oven to 375 F.
Combine egg, mayo, butter or margarine, lemon juice, salt & pepper. Beat with whisk until well blended.
Stir cracker crumbs into mixture.
Add tuna and stir well.
Fill muffin cups 3/4 full with batter.
Bake at 375 F for 20 minutes.
I added one finely shredded carrot to the mix because my kids need 'encouragement' to eat veggies. I used about 1/2 teaspoon lemon pepper seasoning instead of the salt and pepper. I made these in a mini muffin tin because I couldn't find my regular one, but the resulting size was good for a one-year-old. (I reduced the cooking time to 15 minutes.)
